This microlot comes from the well-known and renowned coffee producer Johan Vergara, a third-generation farmer whose family began cultivating coffee in 1990. This variety comes from Acevedo, Huila, Colombia, sitting at elevations between 1,450 and 1,500 metres above sea level, sourced by Finca Las Flores and processed in Peñas Blancas.
This coffee was processed using the natural method. Ripe cherries are carefully selected and subjected to thermal shock at 50 °C for 30 minutes. The cherries are then placed into anaerobic fermentation for 72 hours in lined bags, followed by 24 hours of submerged fermentation in a sealed vessel fitted with an off-gassing tube. Drying begins with 24 hours of mechanical drying at 40 °C, followed by 15 days of solar drying reducing moisture to 11.5% to preserve clarity and ensure long-term flavour stability.
Note: Our 500gr bag comes in plain grey colour with the relevant label and logo.
