Sara Gutiérrez is a dedicated coffee grower from a traditional farming family that turned to specialty coffee to sustain their farming legacy. Her family farm, Finca El Silencio, is nestled in the heart of Buenavista, Quindío, sitting at elevations between 1,400 and 1,600 meters above sea level.
This exclusive lot is produced using a carbonic maceration process. Cherries are handpicked at peak ripeness, then undergo a floating process to assess quality. A final manual sorting ensures only the best cherries move forward.
Fermentation takes place over 168 hours in an anaerobic and controlled CO₂-rich environment, followed by solar drying to preserve flavor and structure. Once dried, the coffee is stabilized for 8 months to enhance its complexity.
