This microlot comes from the well-known and renowned coffee producer Johan Vergara, a third-generation farmer whose family began cultivating coffee in 1990. This particular variety is from Finca Las Flores, located in Pitalito-Huila, Colombia, at an elevation of 1,750 metres above sea level.
The coffee was processed using the washed method. Ripe cherries are carefully selected and then undergo a floating process to assess quality, followed by 12 hours of oxidation in an open-air environment. The cherries are then placed into anaerobic fermentation for 48 hours in a sealed vessel fitted with an off-gassing tube. Following fermentation, they are de-pulped and subjected to an additional 36 hours of oxidation. Drying is carried out in a dehumidifying machine for 36 hours.
