This microlot comes from the well-known and renowned coffee producer Johan Vergara, a third-generation farmer whose family began cultivating coffee in 1990. This variety comes from Acevedo, Huila, Colombia, sourced by Finca Las Flores and processed in Peñas Blancas.
This coffee is a combination of three different varieties: Caturra, Colombia, and Tabi, and was processed using the natural method. Ripe cherries are carefully selected and then undergo a floating process to assess quality. The cherries are placed in a plastic drum for 48 hours to undergo oxidation, after which they are subjected to a thermal shock at 55 °C for 30 minutes, followed by 80 hours of submerged fermentation in a sealed vessel fitted with an off-gassing tube. Drying begins with 24 hours of mechanical drying at 42 °C, followed by 15 days of solar drying.
