This exotic lot comes from the well-known and renowned coffee producer Johan Vergara, a third-generation farmer whose family began cultivating coffee in 1990. This particular variety is harvested from Finca Las Flores, located in Pitalito-Huila, Colombia, at an elevation of 1,750 metres above sea level
Chiroso is a relatively new variety that originated in the Urrao - Antioquia, Colombia. It is a mutation of an Ethiopian landrace and is notable for its elongated beans and distinctive sensory qualities. The name chiroso refers to the shape of the coffee cherry which resembles an achira, a traditional Colombian biscuit.
This coffee was processed using the Natural method, in which ripe cherries are carefully selected with a Brix level between 22 and 26. They are first placed in a plastic drum for 12 hours to undergo oxidation, followed by 48 hours of submerge fermentation in a sealed vessel fitted with an off-gassing tube. After fermentation, the cherries are treated with a thermal shock at 55 °C for 30 minutes, then left for a further 24 hours of oxidation in an open tank. Drying begins with approximately 24 hours of mechanical drying, followed by around 15 days of solar drying. Finally, the coffee undergoes rigorous quality control, is stabilised in the warehouse and carefully sorted before release.
